Chawanmushi

Steamed Savory Custard


SUMMARY

Indulge in a warm, velvety bowl of Chawanmushi—smooth soy custard infused with the deep umami of mushrooms and seaweed. Perfectly comforting for chilly nights!

Ingredients: (serves 4)

  • 700g (25 oz) soy milk (hot)
  • 12g (0.4 oz) diced vegetarian ham
  • 12g (0.4 oz) diced shiitake mushroom
  • 12 g (0.4 oz) diced pickled mustard stem (zha cai)
  • a small amount of minced celery
  • a small amount of shredded seaweed (nori)
  • a small amount of goji berries
  • ¼ tsp. sweet potato starch
  • 12g (0.4 oz) minced carrot

Seasonings:

  • 1 tsp. salt
  • ½ tsp. sugar
  • soy sauce (to taste)
  • white pepper powder (to taste)

Instructions:

  • Add soy sauce, salt, sugar, white pepper powder, and sweet potato starch to the hot soy milk, and mix well.
  • Sauté the diced shiitake mushrooms and vegetarian ham, stir-fry the diced pickled mustard stem and place them at the bottom of a bowl along with the minced carrot.
  • Pour soy milk mixture into the bowl.
  • Steam for 50-60 minutes.When done, garnish with shredded seaweed, goji berries, and minced celery.
