Okonomiyaki (Japanese Savory Pancake)


Ingredients (serves 3-4):

  • ¼ head cabbage
  • ½ pc. carrot
  • ½ cup corn kernels
  • Seaweed powder

Seasonings:

  • ½ cup flour
  • 1 cup water
  • Vegetarian mayonnaise
  • Soy sauce paste

Instructions:

  • Add water to flour gradually to create a smooth batter (reserve ⅓ of the batter for later use). Prepare squeeze bottles for soy sauce paste and mayonnaise.
  • Shred cabbage and carrot. Mix with corn kernels and batter. 
  • Heat oil in a non-stick pan, pour the mixture into the pan, and shape to 20 cm (8 in.) in diameter and 1 cm (about ½ in.) thick. Evenly drizzle the reserved batter over the top. Cover and cook for 5 minutes. Flip and cook until golden. Drizzle soy sauce paste and mayonnaise in a criss-cross pattern, and finish by sprinkling seaweed powder on top.
