Okonomiyaki (Japanese Savory Pancake)
Ingredients (serves 3-4):
- ¼ head cabbage
- ½ pc. carrot
- ½ cup corn kernels
- Seaweed powder
Seasonings:
- ½ cup flour
- 1 cup water
- Vegetarian mayonnaise
- Soy sauce paste
Instructions:
- Add water to flour gradually to create a smooth batter (reserve ⅓ of the batter for later use). Prepare squeeze bottles for soy sauce paste and mayonnaise.
- Shred cabbage and carrot. Mix with corn kernels and batter.
- Heat oil in a non-stick pan, pour the mixture into the pan, and shape to 20 cm (8 in.) in diameter and 1 cm (about ½ in.) thick. Evenly drizzle the reserved batter over the top. Cover and cook for 5 minutes. Flip and cook until golden. Drizzle soy sauce paste and mayonnaise in a criss-cross pattern, and finish by sprinkling seaweed powder on top.
